For most of Ibiza´s history, the inhabitants were either farmers or fishermen, and they ate what they could grow or catch. One of the most important vegetables grown was the potato, and you will see it featured in many of the traditional dishes of Ibiza – bullit de peix (boiled fish in alioli), ensalada payes (country salad) and sofrit pagès (meat and potato stew).
The Ibizan Red Potato is a highly prized local delicacy known for its red skin, yellow flesh, and intense flavour - lovingly cultivated in the island's fertile, iron-rich red soil. This type of potato used to be grown alongside three other local varieties which have now disappeared. Since 2016, work has been going on to recover this treasured variety.
The Ibizan Red Potato is so cherished that there is now an annual festival to celebrate it! It takes place in May in Sant Josep, as part of the celebrations of Saint Isidore, the patron saint of farmers and rural communities.
